This Bubbly is made from Riesling, something the French are prohibited to do by law if they still want to call the product" Champagne". The first impression one gets on the nose is the clear smell of gooseberry and green apple. The Riesling brut appears pleasantly mineral and cool. The following are fresh nuances of light yellow fruit; kiwi and pomelo. A subtle grapefruit and the scent of green banana gradually take hold.

The mouth feeling is robust, tangy. Fine, tart notes on the tongue combined with citrus fruits such as grapefruit and bitter orange. Due to its acidity structure and its pearly Mousseux, it is stimulating and fresh. The aftertaste is reminiscent of a green apple and a hint of florals remains on the tongue. Quite an experience even for seasoned Champagne lovers.

Harvest of fine Riesling grapes in mid- September; Fermentation in stainless steel and maturation on the full yeast until April; bottling May 2019 for second fermentation on bottle; disgorged in June 2020
