Auslese is a German wine term for wine from late harvested grapes, which is one level riper than Spätlese within the Prädikatswein categories of the German wine classification. The grapes are picked from selected, very ripe clusters in the autumn (late November/early December) and must be hand-picked. Bright and precise acidity is balanced by the intense sensation of sweetness coming not only from the residual sugar, but also distinct flavours of ripe orange, lemon, mango and honey.
